Steak Guidelines

Cooking Rules

1)         There will be only 30-35 teams accepted for this event.

2)         Cooking teams may use wood, charcoal, or propane.

3)         Cooks meeting will be at 8:00am. Containers and Competition Steaks will be distributed.

4)         Texas Reds will provide each team with 3-5 steaks. Cooks will choose 2 steaks  to be judged for the competition. 

5)         Grilled Competition Steak will be turned in for judging at 3:00pm, awards  announced at 6:30pm on the main stage located at Main and 28th St.

6)         No garnishment; foil will be provided for judging tray.

7)         Steaks may not be removed from your numbered cooking booth; any violation of  this will result in immediate team disqualification from the competition.    

8)         The cooking teams need to provide all seasonings and “secret ingredients”. No  illegal substances, chemicals, or drugs can be used. Steaks cannot be branded or  injected. 

10)       All steaks remain the property of the Texas Reds.  Teams are expected to  account for all steaks issued, either by turning in a ticket stub or a cooked steak.   We realize that a steak is occasionally lost in the cooking process.  We  understand this and make allowances where necessary. i.e. tasting product for  service and waste.

11)       All steaks are to be handled in a sanitary manner.  Plastic gloves are to be used in handling the steaks at all times. Proper food handling procedures must be followed.

12)       Grills will be inspected for cleanliness before cooking.  Unclean grills will be  rejected.

13)       Cooking teams are responsible for providing tables and chairs they might need at their cooking area.

14)       A minimum 5 lb. ABC rated fire extinguisher must be readily available to each cooking team.  All tents and canopies need to have certificate of fire retardant.

15)       All beer and any other beverage must be in a plastic or aluminum container; no glass. Beer and beverages are for your own consumption.  Do not distribute to Festival guests.

16)       Ashes will need to be contained in the event ash barrels.

17)       No more than two people can sleep at the site Friday night.  All sites must be  shut down for the night by 11:00pm. 

18)       Entry form and fees are due Monday, April 25, 2008.
